　　白酒是以糧谷為主要原料，以大曲、小曲或麩曲及酒母等為糖化發(fā)酵劑，經(jīng)蒸煮、糖化、發(fā)酵、蒸餾而制成的蒸餾酒。酒質(zhì)無色(或微黃)透明，氣味芳香純正，入口綿甜爽凈，酒精含量較高，經(jīng)貯存老熟后，具有以酯類為主體的復合香味。
